Warm potato salad with capers, dill, rocket and lemon

I love baby new potatoes with just butter and salt but here, in this tangy, salty, herby dressing, they taste divine. Don’t be fooled by anyone who tells you potatoes are bad for you. Potatoes are actually packed with vitamins and minerals, particularly when the skin is kept on. And remember, the resistant starch content is increased when potatoes are cooked and cooled - yes please, leftover roasties from the fridge.

Sardines with tomatoes, capers, lemon and basil

Sardines are delicious and good for you: full of omega-3 fatty acid, which is anti-inflammatory and cardio-protective. They’re not always easy to buy fresh, so we’ve made sure this recipe works well with tinned. If you can find them fresh, they just need to be fried for a few minutes on each side until crispy and browned: pure perfection.

Chickpea, feta and dill filo pie

I’m obsessed with filo pies and this one is exemplary. I love the contrast of soft and crunchy bits. Chickpeas are a great source of fibre, feta is a probiotic (which means it contains microbes that help your gut health), dill is packed with polyphenols and extra virgin olive oil is a powerful anti-inflammatory with countless other health benefits.

Cannellini beans with chicken, sage and tomatoes

This glorious dish is just as much about the beans as it is about the chicken - remember that in the blue zones they use meat more as a seasoning than the main event. Here the beans benefit from the deep, meaty flavour of the chicken legs and stock as well as the sweetness and fragrance of the tomato, lemon and sage. The chicken turns out tender, succulent and crispy-skinned. Nourishing through and through.

Artichokes with parsley and hazelnuts

Artichokes are one of my favourite ingredients because their flavour is so exquisite and unique. They’re also an excellent prebiotic - food for your gut microbes - and a rich source of polyphenols. They can be hard to prep, so using ones in jars makes this recipe super-easy. The dish will work beautifully as a side or as antipasto, with bread to mop up the dressing.

When you want an appetising dish in a hurry, try this recipe - it uses mostly store-cupboard ingredients and you’ll have a whole meal in a bowl in no time. The red chicory or radicchio adds a nice touch of bitterness and vibrant colour but if you can’t find any, use any salad leaves you like.

Squash & quinoa risotto

Quinoa is a real superfood. It’s actually a seed not a grain, so is gluten-free, and it’s high in protein and nutrients. We’re using it here to make a hearty risotto-style dish that’s packed with great veg and also contains some beans for extra bulk and protein. A very satisfying supper.
