Food & Drink

Bake it Easy

Brown butter, lemon and raspberry cake

You have to take your hat off to a classic flavour combination: raspberry and lemon produce a crescendo of acidic fruitiness. We’ve added brown butter to bring some extra nuttiness to the table and create a mellow balance.

Strawberry loaf

This simple sponge recipe incorporates some fruit to add a splash of colour and a bit of moisture to your sponge.

Seasonal frangipane

Here’s a cake that can be made year round and reinvented with the seasons. We’ve used plums as they were available at the time of writing. You can replace them with whatever takes your fancy: seek out the tartness of rhubarb in the spring.

Bake it Easy

Chocolate stout cake

This cake is a real catch, a smooth operator of epic proportions. The stout and chocolate-frosting topping adds to the indulgence.

Bake it Easy

Blueberry cake

So you’re in need of a blueberry and lemon hit. We’ve all been there. This recipe is sure to satisfy your cravings.

Bake it Easy

PB&J Blondie

The peanut butter and jelly sandwich has universal appeal, iconic status and an unrivalled sense of fun. The blondie is a little more niche, but still has a sense of playfulness - it’s just a massive cookie after all. That’s why we thought the two would get along just fine.

Bake it Easy

Chocolate & marmalade cake

For those unfamiliar, a jaffa cake is a flat sponge topped with a little bit of orange jelly and covered in chocolate, and it is pretty much the go-to indulgence for this particular flavour combo. With good reason too – the flavour balance is just right. So we’ve used that as a yardstick for this recipe. The combination of chocolate and orange with the subtle grassiness of olive oil is an absolute winner.

Bake it Easy

Grape ricotta loaf

The peppery notes of a good olive oil really shine through in this cake. It’s a versatile recipe, so using red grapes will add a sweetness and colourful contrast, while sharp white grapes bring zingy acidity. If you don’t have polenta, you can simply use a plain flour alternative in its place.
